I feel like it's a game of cat and mouse. Sometimes the window size is too small to see the whole graph, and resizing the window by clicking and dragging has no effect (because the graph keeps resizing with the window resize).
But then sometimes, if I try "fit page to layer" or "fit layer to graph" the graph is suddenly MUCH bigger, even though the dimensions in the properties dialog stayed the same.

If I set the page size to 3.25" x 2.5" (publication size) the graphs are TINY, much smaller than they should be on my 1080p monitor. page? size (F2) to the desired size seems to work when I want to export at a certain size, but then the window size is often really messed up.

Yes, there are lots of documentation on HOW to export the graphic, but that's easy. However, I'm mighty confused by the multitude of different dimension units available to me. I'm trying to setup some scripts to prepare graphs for publications (setting all the sizes correct and fonts/font sizes etc.)
